Chef Michael Smith, a giant of a man, and one of my favourite chefs, is from Prince Edward Island. He seems to be a humble man and very personable. I have watched him interacting with his film crew and I am convinced he is a gentle, caring giant. But more importantly, his recipes are super easy to prepare, quick and very nutritious.
The recipe here, red and yellow potato hash, is a great dinner idea when you just dont want to do much work in the kitchen. Add in a egg for each person and you have a delicious and wholesome dinner.
Variations move it from a Canadian theme to a Mexican if you change the bacon to chorizo and add in red and green peppers, a bit of cilantro and some chili powder. Italian if you change the bacon to Italian sausage and substitute cherry tomatoes for the spinach…yummy!
