Asparagus Salad

A delicious springtime salad that is light on the waistline too.

Asparagus Salad with Feta

 For the salad:

1 lb                  asparagus, blanched and cut into
2-inch pieces on the diagonal
½ cup              red onion, thinly sliced           
¼ cup              pine nuts, toasted
¼ cup              feta cheese, crumbled
2 tbsp             fresh lime juice

For the dressing:

1 tbsp              fresh lemon juice
1 tbsp              Dijon mustard
1 tbsp              olive oil
¼  tsp              pepper

Combine salad ingredients in a large bowl.

In a separate bowl, add all salad dressing ingredients. Whisk to combine.

Dietitian’s Tip:
Blanch the asparagus before or after cutting by steaming or microwaving for 1 to 1.5 minutes to soften and bring out the colour.  Quickly dip into cold water to keep the bright green colour.
