No Mayo Broccoli Salad

A healthier broccoli salad as we substitue yogurt for the mayo.

Ingredients

  • 1 1/2 lb Fresh broccoli, cut into small pieces
  • 1 cup Fresh blueberries
  • 1/4 cup Red onion, finely diced
  • 1/2 cup Dried cranberries
  • 1/4 cup Sunflower seeds
  • 1 large Apple, diced
  • 1 Tbsp Lemon juice

Dressing

  • 1 cup Plain Greek yogurt
  • 1/4 cup Honey
  • 1 Tbsp Lemon juice
  • 2 tsp Apple cider vinegar
  • 1 Tbsp Poppy seeds

Directions

In a small bowl, combine apple with lemon juice. In a large bowl, mix broccoli, blueberries, red onion, cranberries, sunflower seeds, and apple. In a small bowl, blend ingredients for dressing. Add dressing to salad and toss gently to combine. Refrigerate for up to 3 days.
